Some Summer Salads-as a Hostess Gift

If  you invited me over to your home for a picnic, this is exactly what I would bring to share with you and your family. These recipes were given to me by friends, and now I will pass them on to you. In my opinion, it is the best Pasta Salad Recipe, I have ever tried. I take every opportunity I have to make it or bring it, and this Cashew Salad is just so different and fresh, and I adore the mix of the sweet dressing and salty flavor of the cashews.

Pasta Salad

2lbs Pasta Swirls-cooked to perfection

1/2 tsp. onion powder

1 1/2 tsp. garlic powder

2 tsp. Italian seasoning

1 tsp. Spanish paprika

2 bottles of {house} Italian dressing-add 1 to the finished salad and 1 for the table

cherry tomatoes


deli cheddar cheese 1 1/2 cups cubed

1 bag pepperoni

chunk of genoa salami or hard salami-cubed

1/3 cup parmesan cheese

Toss, chill, and serve.

This salad is new to me this summer, I took one bite and just knew I had to have the recipe. It is the perfect mix of flavors, and leaves you hungry for more. In my opinion it couldn’t be more flavorful. Again, this came from a friend, I hope you enjoy it.

Cashew Salad


1 cup oil

3/4 c.sugar

1/2 c. vinegar

1 tsp. dry mustard

1 tsp. celery seed

1 Tbsp. chopped onion

Mix in bowl one head of iceberg lettuce and 1 bag of spinach, washed and dried

1 can salted cashews

If you are taking this to a party or serving a group, pour your dressing right on the salad and toss. I have found that when making it for just a few people, it is better to keep the dressing in a separate container, and pour it on the individual salad plates. I usually just mix the ingredients in a measuring cup and serve right from that. This way the left over salad can be eaten a second day and the lettuce doesn’t get limp.

One lovely way to bring these or any other salad, to a friends house, as the hostess gift, is try purchasing a beautiful bowl as the gift. Take the Salad in the bowl, and your hostess gets to keep the bowl as a thank you, for hosting the get together. Remember, those hostess gifts, they are very much appreciated, and we all know how much work goes in to having company. I mean you have to clean the entire house, basement, garage, organize closets, bag clothes up for the Salvation Army, plant flowers, maybe even paint……lol, please tell me I’m not alone here. I clean things that haven’t been cleaned in ages. If you are doing this, as I am, you know your hostess is doing the same thing. Poor girl, take her a gift. Well, I hope some of you try these recipes, no, I hope all of you do, those who don’t are missing out on some yummy Summer Salads.
