I have a few recipes that are my go-to, you know the ones, I’m sure you have them as well. I am going to try to pop in a few times over the Summer, to share a few that I can’t live without, and believe you would enjoy as well. Here, I want to share the Guacamole recipe I got from my daughter Courtney, we love it so much. I recently received this Mortal nd Pestle from Hayneedle and I have been putting it to good use. Lets jump right in to the recipe, it is a really simple one.
1/4 finely onion chopped
1-Roma Tomatoe chopped
A few fresh Cilantro leaves coarsely chopped- I use a little extra here
the juice of 1 lime
Salt to taste
To start cut your Avocodoes down the middle and twist to separate the halves, poppet the seed either with a knife or a spoon. Spoon 3 into a Mortal and Pestle and and grind into a mush. Then add remaining ingredients, salt and lime to taste, and dig in. Try adding a dollop or two to your cheeseburger, it sure is yummy.
I covered mine with plastic wrap and stored in the refrigerator for a few hours to chill, the plastic wrap should help it from turning brown or getting too watery. Eat up. I hope you will give this a try and check back I will sharing a few more yummy creations very soon.
